Spring Rolls

Spring Rolls, also called summer rolls, is one of my favorite dishes. It's a Vietnamese dish, very fresh and healthy. Although the name would probably suggests the idea of the Chinese/Indonesian fried version, I mean a total different dish. A Vietnamese spring roll is made of rice paper, filled with fresh ingredients like lettuce, shrimps, bean sprouts, cucumber and vermicelli, together with coriander, mint, pepper and some spring union. You serve it in moisturized rice paper, together with a good fish or chili sauce (although I also like to add Hoisin sauce). I like it because it is fun to eat; in the real Asian way, you put all ingredients at the table and everyone creates his/her own springroll themselves. A fun, easy and healthy dish to especially enjoy with a bunch of friends!

Recipe
rice paper
shrimps (already cooked)
cucumber
vermicelli
lettuce
bean sprouts
red pepper
spring union
coriander
mint
fish/chilli/hoisin sauce

Cut the cucumber, spring union, red pepper and and all the herbs in small pieces. Take all the sliced food plus the shrimps and bean sprouts and put every ingredient in a different small bowl. Rip some leaves from the lettuce, but don't slice it. Warm up some water and make the vermicelli ready (blush off with cold water to stop it from being sticky) and warm up some water and put it in a big bowl. Put it down at the table together with all your ingredients. Moisturize the rice paper and put it on your plate (this takes some practice). First spread out a leave of lettuce on the paper, then fill it with all the ingredients you like. When you are content, you roll the rice paper and paste it tight with the help from some water. Dip your spring roll in some sauce, and enjoy!
