Skrei

If you ask me, there is no better way then to spend your free day together with friends; cooking, chatting and drinking loads of wine. This week, I had such a day. I went to Marqt, this amazing organic supermarket where you can find local and all organic good quality food.  After having some wine and beers in a skinny late March sunlight, we decided to head up to marqt and spoil ourselves with some skrei. Skrei is the name for a cod between January and April, when the fish swims from the Barentszzee to Norway to spawn. Skrei comes from Skrida, a word the Vikings used for travelling. We combined the skrei with a risotto with fennel, sugar snaps and peas. The skrei was marinated with lemon zest, dairy butter and mint. To keep us from snacking all the food, we started with a delicious black pepper sausage, from the famous Dutch sausage makers Brandt & Levie.
